Colombian Rice with Coconut

Dinner or dessert?

Rice with coconut is a very common dish in Colombia, and has many variations. You can do it to serve with meat or fish or you can do it as a dessert. Either way, it’s always delicious.

There are some very complicated recipes and some very simple ones. We prefer to include here recipes that can be easily made.

Recipe

Ingredients:

1 coconut
1tablespoon cooking oil
Salt,
1 tablespoon sugar
2 cups of rice
Water of the coconut
4 cups of water

Preparation:

Open the coconut, save the water
Grind the coconut, squeeze it with your hands to take all the milk out of the coconut, and save this milk apart
Put in a saucepan the oil, and the grinded coconut to a slow frying until it browns. Then add the milk, the coconut’s water and the 4
cups of water. Once this starts to boil, add the rice, the sugar and the salt. Make sure to move it often, so it doesn’t stick to the pan. Put the fire low and let the rice get done. Serve it very hot with meat, fish, poultry or baked ham.

Sweet coconut rice: other recipe

Ingredients:

1 coconut
The coconut’s water
The coconut’s milk
1 cup of sugar
Vanilla
Cinnamon
1 ½ cups of rice
2cups of regular milk
2 cups of water

Preparation

Open the coconut, save it’s water. Grind the coconut’s meat, squeeze it’s milk, save this milk. Put the coconut’s milk, the coconut’s water, the 2 cups of regular milk and the 2 cups of water in a saucepan. When it starts to boil, add the grinded coconut, the sugar, the rice and let it cook at a low fire. When the rice is done, add one teaspoon vanilla and put all in a flat serving dish. Pour over it cinnamon to cover it all.
Serve it cold as a dessert and it’s so very good!!
